2× 20cm round tins
225g self raise flour
225g softened butter
225g sugar
4 eggs
1 teaspoon baking powder
Plus
Strawberry or raspberry jam
Fresh berries
100g butter
140g icing sugar
Preheat oven to 180c or 160c fan and line two 20cm round tins with baking paper.
In a mixing bowl crack 4 eggs, sift in the flour, sugar, baking powder and added the softened butter. Stir with spoon, spatula or hand blender until smooth.
Put mixture into both tins, equally divided and bake in middle oven for 20-25 mins until starting to go golden.
Leave to cool for 15 mins then remove tins and let cool again 30 mins.
Meanwhile make butter cream with the extra softened butter and sift in the icing sugar, mixing until creamy.
Or just like Queen Victoria have just jam in middle!
Sift some icing sugar on top with the fresh berries to serve!
